Baked potatoes

Presentation

Baked potatoes are an Italian classic that everyone loves. In this recipe I propose a simple but delicious version with a crunchy and golden crust on the outside and a soft heart inside. I often eat them alone or I like to accompany them with fresh cheese. A simple and tasty dish that will please the whole family.

Ingredients:

  • 6 potatoes
  • 3 cloves of garlic
  • olive oil to taste
  • salt to taste
  • pepper to taste
  • spices (oregano) to taste

1 Peel the potatoes and rinse them, 2 then peel the garlic cloves and crush them using the knife. 3 Cut the potatoes into large wedges or fairly uniform chunks and arrange them in a non-stick oven tray if possible.

Baking

4 Add plenty of olive oil to the potatoes and the crushed garlic cloves. 5 Salt everything to your preference and add your favorite spices. I put oregano, but rosemary is still more used in Italy. 6 At this point mix everything with your hands to mix the ingredients as much as possible.

End of cooking and plating

7 Arrange the seasoned potatoes on the tray so that they overlap as little as possible and bake in a static oven at 200°C for about 80 minutes. 8 About every 20 minutes, stir the potatoes so that the wedges brown evenly. 9 When the potatoes have a nice golden crust, take them out of the oven and grate a little pepper on them. At this point the potatoes are ready to be enjoyed alone or accompanied by whatever you prefer.

Advise

  • The cooking time can vary significantly depending on the pan you use, so always take a look at your potatoes to best adapt the cooking time to your situation.
  • They are also very good when spiced, for example with a mixture of sweet and spicy paprika and fennel seeds.
